You would think that this would be the week that the flu would have taken us down, but as luck would have it, two of the dogs got sick instead. The other day we woke up incredibly early to Ernie vomiting in our bed, and Foyle vomiting on the floor. Not sure what is going on with Ernie, more than likely he ate....well, no need to elaborate but let's just say it is a bad habit. Foyle's stomach is on edge because his body is producing too much acid due to his kidney disease. So, when I saw this recipe for vegetable leather (kind of like fruit leather) I thought the pumpkin and the addition of ginger might soothe their stomach issues. Honey is also a natural digestive aid so I'm hoping the triple crown of natural medicine will help. I modified it a bit with the addition of applesauce because it was too thick to put in the ice cube tray.
- 1 cup canned pumpkin (organic, not for pies)
- 1/8 cup honey
- 1/4 cup applesauce (or as needed to thin out the mix)
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- Mix all ingredients together in a blender and thin with applesauce as you go to get the consistency fluid enough to pour into ice cube trays.
- Pour into trays and freeze.
Here's Foyle waiting by his bowl to eat a few pieces as I was taking pictures. He loves pumpkin and I think the coolness of it felt good to his stomach as well. Hmmm, I'm wondering if it would be good in smoothies as well? Great way to get a little extra immune boost in your diet!
