I was reading the book Beyond Snapshots yesterday and they recommend using Gradient Map conversion (for Photoshop & Elements click Adjustment Layers and chose Gradient Map) for black and white photos instead of desaturating or swapping to grayscale. I tried it today and made some more tweaks and I think you get a stronger contrast and a better balance. The Mr. just told me that his teacher mentioned to change the exposure first before you start in adjusting the levels and brightness/contrast. Give both of them a shot and tell me which one works out better for you.
